Food on a Stick: Kofte

I love to break up the meat and stuff it in the pita with some of the salad. Find your own favorite way to eat the kofte!

Luckily I didn’t try this recipe last night, especially with the long metal pointy sticks I was using. Even though I managed to cook dinner for four last night after three martinis (many thanks to The Husband’s grilling wizardry), it was bison burgers and we’ve made those several times before. I’m not sure if successfully cooking while intoxicated is really a skill I should shout about on my blog, but it’s a fact of life. So there.

The night before I used the pointy sticks, and there were no injuries to report. These minced-meat-on-a-stick idea came from me wandering around Whole Foods with no clue for dinner. I was not feeling overly creative, and we’d already had chicken twice that week. The Husband doesn’t like lamb too often, I can only eat bison (not beef, as they seem to lie about the “grass fed” part and it kills my stomach), and now we’ve been hearing about radioactive fish I figured he’d not like me bringing home fish either. I am so spoiled at home. The Husband is just the best ever. He does the laundry. He makes me fine drinks. He generally treats me like a princess! Yep, it’s a regular love-fest around here, and I’m not ashamed to say it!

I have to say, I’m getting hungry again just thinking about this recipe! I was trying to cook vegetarian dishes all last week, and I had some Soyrizo lingering in the fridge. I’m always so amazed at how delicious Soyrizo is, and once I taste it I can’t wait to have more.

Last Sunday, to celebrate my nomination for the Versatile Blogger Award (thanks again!), I made myself a Soyrizo, egg and cheese breakfast sandwich. Since that day I was planning what I’d do with the rest of it. And, true to form, I decided to make something that was totally labor-intensive for a weeknight. Oops. But it was totally worth it. Cilantro Garlic Chicken Under A Brick

These chickens from Lydia at the farmer’s market—yes, I finally found out her name—are freaking amazing. We have been getting one a week, and last weekend we found a magic combination of herbs and spices that just made the chicken sing. Not literally. That would be weird.

Mmmm....it's hard not to eat the whole thing in one sitting! But we didn't. I swear.

Last night we had a great opportunity to try the recipe out again, and on other people to see if it really was that good—both the flavor of the mix and the chicken itself. Both were given superb reviews. Continue reading

Black bean tacos

It wasn't even Taco Tuesday!

Wednesday night, another veggie-dinner night. I was happy to find the tomatillos at Whole Foods, because I love a green salsa, even though The Husband usually doesn’t. But I knew if I made it from scratch I’d win him over. Which I did–he loved them, and especially the salsa. Which I must say, was quite good.

And non-vegans, please, add cheese to these tacos! We were on our cleanse, so no dairy, but they really deserved some nice cotija cheese crumbled on top. In SoCal, you can find this and other delicious Mexican cheese varieties in the cooler section near the processed cheese. I would recommend investing–it lasts for a while and is great in salads as a nice substitute for feta. Speaking of feta, those who do not live in SoCal, like my dear friend Gaby in London, should use feta on top of these tacos. Although cheddar would work in a pinch.

And Londoners, if you can’t find tomatillos, try Booths near St. Paul’s Cathedral. They have a stall at Borough Market, or at least they used to. (How I miss that market!) You can get jalapeños there too, but I’m not sure about serranos. Substitute a green Thai or Indian chili if you can’t find the Mexican variety.
