Pesto, Part Deux: Poulet

Occasionally, The Husband does come up with some lovely ideas for me to try out in the kitchen—long-time readers will remember that the bacon-crumble apple pies were his idea.

As usual, we bought our weekend chicken from the farmers market, and that chive pesto was still hanging around in the fridge—bright and perky, by the way, even over a week old. I love those glass snap-lock containers! He suggested we combine them both, putting the pesto under the skin. Barbecue as Pizza Oven

Now that's what I call a pizza, not those things that come in a box!

That’s right, you read it correctly. We got sick and tired of crappy pizza in our neighborhood (thanks, Gina’s, for changing your menu for the worse), and kept seeing some great grilled pizzas in my food magazines. I figured we’d give it a go—what could go wrong?

Exactly, said The Husband, and refused to try it when friends were over and wanted to do a test run. No problem! Strangely enough, the perfect opportunity came on a Saturday when we thought we had nothing in the fridge to rustle up. The Husband lamented that we had just been near Trader Joe’s and could have picked up some pre-made dough, but I scoffed. I’ve got yeast and flour and I’ll make fresh dough myself, no problems. The Sandwich, Part One

This is called The Sandwich, Part One because there are a few sarnies in our house called The Sandwich. This is, to be specific, The Sunday Breakfast Sandwich, and The Husband loves it. In fact, he was doing his “Happy Sandwich Dance” as he finished it this morning. It was a thing of beauty.

So, vegans, look away now. There’s no way I can make this sandwich vegan, as it features an egg as a centerpiece. Vegetarians can merely substitute the meat for some fake bacon and be on their merry way. I guess if you remove the egg, use fake bacon and use Vegenaise, you can have something similar. I will have to think of a delicious vegan breakfast sarnie. (BTW, “sarnie” is sandwich in Brit-speak.)

In our tiny kitchen, this is quite a production, but I’ve got it down to a science now. The Husband and I were discussing this morning that you can use prosciutto instead of the bacon, but it makes it a little salty if you use cheese. I use my mayo-salsa spread instead of cheese, so I don’t have that problem. Sally forth as you feel is most appropriate for you!
